What We Ate Today #10

Here is recipe that literally takes 5-10 minutes to put together:

Egg, Cheese, Tomato and Avocado (Must pronounce “tomato” as “to-MAH-to“)


3 Eggs

Slice of Avocado

Tomato, sliced

Shredded cheese (aged cheddar is the best)

1 tbsp EVOO


Heat EVOO and add eggs. Break the yokes with the spatula. When is is almost thoroughly cooked, flip. Add salt and shredded cheddar. Once cheese melts, remove the eggs and add to a plate.

Add sliced tomatoes to the pan add pinch of salt. Leave on one side and flip after a minute. The tomatoes should look a little orange and emit juices, but still retain their shape. Ration tomatoes on each egg. Serve with the avocado on the side. The warm acidity of the tomatoes and the coolness of the avocado is a great combo!
