What We Ate Today #5

Mmmmm…Crepes

Bet you didn’t think you could have these. I also like to call them French-Sans Toast. This makes for a light and somewhat sweeter breakfast. It is also very simple!

Here is what I did:

Directions:

3 Whole Omega-Three Eggs

Cinnamon to taste

Stevia to Taste

1 Tbsp Coconut Oil

Optional-1/4 scoop of Vanilla Protein Powder for texture

Other items I like to throw in: Vanilla Extract, Pumpkin Pie Spice, Nutmeg, Ginger

Instructions:

In a non-stick pan, heat the coconut oil over medium heat. Mix the other ingredients together. Pour a small amount into the pan so that it spreads thinly like a crepe. It should cook very quickly, almost all the way through because of the thinness. Flip and let it cook on the other side for 10-15 seconds. Slid onto a plate. Do this with the rest of the batter.

During the 25-Day Challenge topping are limited but you can add more cinnamon and stevia and it will taste a lot like powdered sugar and cinnamon. On free days you can add fruit, peanut butter, whipped cream, cream cheese, just have fun with it!

Here is a video of the finished product. This is also great for kids as you can top it with fruit, just like a crepe!

    Naomi, could you suggest some things for a quick snack? Since nuts, dairy, and nut butters are out for the 25 day makeover, I am struggling with ways to make snack like items out of meat, hard boiled eggs, and chopped veggies. Any ideas? I love this blog. You are offering some great ideas. Keep ‘em coming!

      Snacks are a tough one: My favorite thing to do it eat mini tomatoes in balsamic and olive oil with a little salt. Cucumbers work too. If I throw in chicken or hard boiled eggs with it, it is delish. I eat olives as they are strong and it only takes few to satisfy.

      Unsweetened Almond Milk is great if you are craving sweet and cold. It comes in chocolate or vanilla. Make sure it is unsweetened though. You can add a little stevia and ice and it tastes like sweet milk. You can also go w/o Stevia and it tastes closer to regular milk. Keep in mind there is very little nutritional value to the Almond Milk so you still want to have a food-based snack. However, I have found the chocolate almond milk really curbs my sweet tooth. I’ll post any other ideas that come to me.

      I made them this morning with cinnamon and stevia. They were pretty good. I initially left the stevia out, but needed a little sweet. It did just the trick! However, I really need to work on my technique as they didn’t look too pretty:)
